IG: Eating well while traveling for long periods can be tough (45 days!), and I’ve had to make a few exceptions to how I’d typically eat at home simply due to ingredient availability. But c’est la vie. It keeps you on your toes and even out of your super cozy comfort zone which is GOOD. Here’s my typical jungle lunch (often paired with fresh eggs, but not today): big salad with tomato, peppers, mashed avocado, green onion and feta and some green plantain pan-fried in coconut oil ?.
