IG: Even after traveling for a zillion hours and on very little sleep, I’m grateful I can still conjure up the energy and enthusiasm to pull together an epic healthy dinner from scratch. Behold, one of my favourite meals of life: coconut curry. Easy + satisfying + healthy + DELICIOUS and a genius way to pack in veg. I simmered the spices in coconut oil until fragrant (fresh garlic, fresh ginger, onion, curry powder, chili flakes and freshly picked kaffir lime leaves), then added ample coconut cream. Simmered al that a lil’ more and then added the green veg (broc, asparagus, green pepp, zucc) and some salt and pepper. Served over some organic basmati white rice cooked in lotsa butter, garlic and more kaffir lime leaves. Ok it was an epic masterpiece. Feeling so jazzed to be back in my element again
