IG: This steamy, spicy chicken and veg coconut curry over basmati just feels so appropriate on this gloomy, cool rainy Sunday. I typically take weekends off workouts but we made it to the gym this afternoon, and so I am now enjoying this delicious post-workout dinner. It took less than 20 minutes to make, 100% from scratch, and and used up a bunch of leftovers from the last couple days). Soooo warming and satisfying and delicious ??. Happy Sunday! UPDATE: it was so good I ate 3 bowls…?oops ???❤️
