IG: When the kitchen gods bless you with an immersion blender (the white stick thing) and then the grocery gods bless you with @chosenfoods avocado oil in a random grocery store in Bocas del Toro, Panama, you make AVOCADO OIL MAYO???!!!! ?????? sooo happy right now that I can slather this clean condiment on everything I eat, because the alternatives are quite frightening to a Holistic Nutritionist. The recipe is simple (my original olive oil/personal blender version can be found on my blog as well). Avocado oil mayo: In a bowl, combine 1 cup @chosenfoods avocado oil mayo, 1 pastured egg, 1 Tbsp fresh lemon juice, 1 Tbsp white vinegar and 3/4 tsp salt (optional: add some Dijon for extra zing). Using about 1/4 cup at a time, scoop liquid into immersion blender cup and blend on lower setting until liquid is combined and becomes thick. Keep adding the rest of liquid slowly until eventually all liquid has been added and you have a nice thick mayo. Store in fridge. Note: this recipe contains a raw egg so use good ones. Also try not to eat it all at once, it’s that good. Ok happy Monday! • • •
