Jeff put these beautiful salads together for lunch on the weekend using the minimal ingredients we had (we needed to grocery shop pretty baddddd)– don’t they look awesome?! We used romaine lettuce + shredded carrot + homemade purple sauerkraut + organic raw nori + sliced avocado + bacon + hemp hearts and a lemony-hemp/evoo dressing. Killllllllled ittttttt! P.s. IG: Gardener hands ???… I wear gloves a lot to avoid totally destroying my hands but there are some tasks that just require bare hands. I had this one rather “doom and gloom” teacher during my Holistic Nutrition schooling, that was adamant that we always wear gloves while gardening and never actually touch soil with our bare hands because we could contract parasites and other nastiest from the soil (honestly, she was parasite paranoid…). But FYI there are parasites everywhere, and I never agreed with avoiding soil. Humans have been in contact with raw, bare earth since the beginning of time. Sure, the soil isn’t the same high quality it used to be, but I still think you need to get dirty AF sometimes. And I think too many of us have zero contact with soil, dirt, and the earth from which we came, and which we will one day go back to. What are your thoughts??

I planted Dino kale, rainbow chard, bloomsdale spinach, mystery squash (which had already sprouted itself), nasturtiums, French marigolds, dynamite lettuce, radish, onion, tiger striped zucchini, summer squash hybrids, garlic (which has sprouted itself), red Pontiac potatoes, sweet peas, calendula, heirloom Italian Tuscan baby kale, scarlet Nantes carrot, candy cane beets, ruby glow lettuce, lemon balm, avocado (which had already sprouted itself), Pickle Bush cucumber, cherry tomatoes (which had already sprouted themselves, sweet basil and cilantro. YAYYYYYY! Bless these veggies and let the growing begin

IG: COMPOST MAGIC???: these healthy little seedlings grew themselves from the food scraps my parents had been digging into their raised beds all fall/winter. My mom “cold composted” for years, which is the advanced/accelerated composting method of blending up plant waste with water and pouring it into the earth for “rapid fire absorption” (kinda like juicing for humans). But when her health started to decline, she didn’t have the energy to do this. So, my stepdad was just digging the whole scraps into the earth, aka regular composting. But from this has come a miraculous array of healthy seedlings!! We gots all these mystery squashes/pumpkin seedlings, what I believe is watermelon seedlings (or tiny squash), a million cherry tomato seedlings, sprouting garlic, seed potatoes and moreeee. And this particular picture is just the LEFTOVER sprouts after I had already planted about 30 of the larger ones in the raised beds over the past 2 days. 8 raised beds planted, 2 to go! Today I thank the universe and my mom for the gift of these magical mystery sprouts that are so healthy and full of life. Happy Saturday to you
