IG: Enjoying some tangy Thai Coconut Soup on this last day of the decade 🥰 [dairy-free, gluten-free, heavenly]. This gut-loving, anti-inflammatory masterpiece starts with a base of organic chicken bone broth in which I simmered fresh kaffir lime leaves, fresh grated garlic + turmeric + ginger. Fresh lime juice would have been perfect but I didn’t have any, so I added some kombucha vinegar for acidity, tamari for saltiness and a pinch of maple syrup to balance it all out. Then for creaminess I added coconut cream and coconut mana as well as some tomato paste, fresh ground pepper and a pinch of cayenne. I also added some rice noodles, cuz, yum. It’s zingy, comforting, cleansing, energizing and perfectly balanced, everything I’m hoping 2020 will be 😆. Stay safe this New Years and here’s to an amazing, healthful new decade ahead!
