IG: Spent the morning in my happy place harvesting green veg & herbs to make more room for growth in the gardens! I yanked out all the plants that have bolted from the heat as well (which is fine as I was expecting this and plotted accordingly🙌🏼). Since I have an overload of greens and Jeff is away for the week, I’ve decided to large batch juice and freeze it immediately in single serving mason jars. Green juice loses its nutrients quickly so storing batches in the fridge isn’t the best idea. Drinking immediately or freezing is a great way to prevent nutrient loss and get the most out of your green juice, as well as a solution to reduce the time you spend juicing (because let’s be real, it takes time prepping veg, juicing and cleaning up after). What’s been funny to me is how much I have been harvesting and how you can’t even tell I’ve taken anything away from the raised beds! Really stoked to have these new beds and to be able to grow my own food, AND eat it freshly picked, even if it’s only for a part of the year
