Who doesn’t love mouthwatering blueberry pancakes on a snoozy Sunday morning? Or any day, any time, really.
The beauty of this recipe is that it’s SO simple. You can be kinda sloppy and not really put a whole lot of TLC into it and they’ll still turn out great.
Blueberry Blender Pancakes Recipe

Passive Time 10 minutes
Ingredients
- 1/2 cup organic quinoa flour
- 1/2 cup organic brown rice flour
- 2 tsp baking powder
- 1/2 tsp Himalayan salt
- 2 tsp maple syrup
- 2 organic eggs
- 2 tbsp organic extra virgin coconut oil
- 3/4 cup coconut milk or almond milk
- 1 tsp natural vanilla extract
Instructions
- Take your blender and literally toss ALL the ingredients in.
- Blend all for 30 seconds or until well mixed.
- Let sit for 5 min before cooking batter on a hot griddle or coconut-oiled pan.
- Add wild blueberries by the spoonful to each pancake while cooking (and cover each one with batter to avoid sticking when flipped over).
- Top with organic coconut butter, hemp hearts and a drizzle of real maple syrup.
- Enjoy!

I loved lots of your GF recipes !!! Simple easy to understand recipes and TASTY ! I love ❤️ the name of your website too !!! It’s a great name for a psychologist too. Lol. I ran across your site by the Cassava flour website. Just made several cassava recipes today. We’ll find out from the family. My daughter was diagnosed with Celiac so we’re all going GF. I already had been doing that by cooking with Almond flour and a GF mix. I had UC and had my colon out but I’m doing great. I made pumpkin bread and pumpkin pop tarts with cassava flour. We’ll find out tomorrow how they taste !!! I really did print off several recipes and looking forward to making several !
