This is my new favourite recipe for “bread”, which I have adapted from various paleo recipes. I say “bread” because this pseudo-bread is made almost exclusively of seeds and eggs– ABSOLUTELY NO GRAINS. This means it’s gluten-free, grain-free, yeast-free, paleo-friendly and can be made as dairy-free and/or sugar-free (I’ll include these options).
It’s also amazingly delicious. I might actually like it better than real bread. It toasts up like a charm too!
Grain-Free Paleo “Bread” Recipe
Servings 1 small loaf
Prep Time 20 minutes
Cook Time 45 minutes
Ingredients
Dry Ingredients
- 1 cup finely ground pumpkin seeds
- 1 cup finely ground sunflower seeds
- 1/4 cup ground flax
- 1/4 tsp sea salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
Wet Ingredients
Instructions
- Pre-heat oven to 350°F.
- Pulse dry ingredients together in food processor until mixed.
- Add wet ingredients to a medium sized bowl, then pour into food processor with dry ingredients. Pulse until mixed together.
- Pour batter into small greased loaf pan, approximately 7.5x3.5in.
- Bake for 40-45min.
- Let cool before transferring.
