Here is a treat made completely from scratch that you don’t have to feel terrible about enjoying every once in a while. As with my Raw SUPERFOOD Truffles, these treats are made of real ingredients with health benefits!

Raw Chocolate Nut Butter Cup Recipe
(makes about 20 small cups)
Ingredients
- 1/2 cup organic extra virgin coconut oil
- 3 tbsp clean whey powder (I use a blend of New Zealand Whey, vanilla bean powder and stevia that I customized from U-RAAW! If you don't do whey, you could probably replace it with a vegan option, or omit it altogether)
- 1/4 cup raw cacao powder
- 2 tsp-1 tbsp raw Manuka honey or raw honey (start with 2 tsp and taste test-- it all depends on your preference for sweetness)
- pinch Celtic sea salt
- 2 tsp non-GMO Lecithin powder Optional: (If you don't have this, it's okay!)
- raw almond butter
Instructions
- Melt coconut oil in a sauce pan.
- Turn off burner. Whisk in whey powder, cacao powder, raw honey, sea salt and lecithin until all ingredients are dissolved and you have a "chocolate" sauce.
- Place mini cups onto a plate. Pour "chocolate" into cups to just line bottom, about 1/8 inch.
- Place plate with mini cups into freezer. Chill in freezer for about 5 min.
- Remove from freezer, add about half a small spoonful of raw almond butter (or other desired nut butter) to each cup. Do not overfill.
- Pour "chocolate" on top of almond butter to fill cup to desired height.
- Sprinkle with sea salt and/or place nuts on top to make them look pretty.
- Place plate of cups back into freezer for about 5 more minutes, until solid. Store in fridge.
**UPDATE: Raw Chocolate Hazelnut Almond Cups 2.0**
- The other day, I tried out an even quicker and easier version of this recipe using organic hazelnuts and almonds that I chopped up and roasted in the oven with sea salt (instead of the almond butter). IT WAS DELICIOUS.
- Follow steps 1 and 2 to make the raw chocolate, and then simply add about a cup or so of chopped, roasted, sea salted hazelnuts and/or almonds (or your favourite nut) into the chocolate. Spoon the chocolate and nuts into little cups and chill. Voila!
