Raw Chocolate Nut Butter Cups

Here is a treat made completely from scratch that you don’t have to feel terrible about enjoying every once in a while. As with my Raw SUPERFOOD Truffles, these treats are made of real ingredients with health benefits!

Raw Chocolate Nut Butter Cup Recipe

(makes about 20 small cups)

Ingredients

Instructions

  1. Melt coconut oil in a sauce pan.
  2. Turn off burner. Whisk in whey powder, cacao powder, raw honey, sea salt and lecithin until all ingredients are dissolved and you have a "chocolate" sauce.
  3. Place mini cups onto a plate. Pour "chocolate" into cups to just line bottom, about 1/8 inch.
  4. Place plate with mini cups into freezer. Chill in freezer for about 5 min.
  5. Remove from freezer, add about half a small spoonful of raw almond butter (or other desired nut butter) to each cup. Do not overfill.
  6. Pour "chocolate" on top of almond butter to fill cup to desired height.
  7. Sprinkle with sea salt and/or place nuts on top to make them look pretty.
  8. Place plate of cups back into freezer for about 5 more minutes, until solid. Store in fridge.
**UPDATE: Raw Chocolate Hazelnut Almond Cups 2.0**
  1. The other day, I tried out an even quicker and easier version of this recipe using organic hazelnuts and almonds that I chopped up and roasted in the oven with sea salt (instead of the almond butter). IT WAS DELICIOUS.
  2. Follow steps 1 and 2 to make the raw chocolate, and then simply add about a cup or so of chopped, roasted, sea salted hazelnuts and/or almonds (or your favourite nut) into the chocolate. Spoon the chocolate and nuts into little cups and chill. Voila!
  3. Enjoy!
